Winter is coming up and it is time to get out the winter foods. I think we have already established that soup is one of the foods that is big in Portugal and so is fish. Not just any old fish of course, Cod fish, is the Portuguese decadency. So here is a recipe that combines both Cod and soup. Furthermore, it’s a recipe by Cello Santos, so enjoy.
You will need:
100g salted cod fish- desalinated and shredded
Half a medium carrot- grated
Half a medium onion- cut into thin segments
Handful of rice
Half a teaspoon ground black pepper
Two tablespoons olive oil
Pinch of fresh parsley
One spring onion- finely sliced
To desalinate the cod: soak in water overnight, rinse 3-4 times with fresh water (you can taste the fish to test it’s not too salty).
Bring one litre of water to the boil
Add all the ingredients except the parsley and spring onion
Boil rapidly until the rice is cooked
Serve garnished with fresh parsley and spring onion
