Laurentina Prawns

Why Laurentina? This is the name given to the girls born in the former Lourenco Marques City, I am one of them.

What you need:

kg large prawns cleaned
25 ml lemon juice
10 ml salt
75 ml butter
75 ml olive oil
5 cloves garlic crushed
Fresh chillies to taste
500 ml Beer

How to do it:

Marinate the prawns in lemon and salt for 1 hour. Melt the butter and olive oil in a pan, add the garlic and chillies. Once sizzling add a glass of beer.

Allow the liquid to reduce slightly, add the prawns and stir well, ensuring all the prawns are well coated, stir for about 5 minutes. Turn up the heat and add remaining beer.

Serve hot with chips.
